Tapioca (pdf for printing)
INGREDIENTS:
2/3 cup Red Bob’s Tapioca
1 ½ cups water (for soaking)
2 ½ cups coconut milk (light)
½ cup water
½ cup raw honey
1 tsp vanilla
1 tsp cinnamon
½ tsp nutmeg
DIRECTIONS:
- Soak tapioca in water for 30 minutes. Do not drain.
- Add coconut milk. Bring to a boil and simmer until thick stirring frequently, about 25 minutes.
- Remove from heat and add honey, vanilla, and cinnamon.
- Pour into glass container and sprinkle with nutmeg.
- Cool in refrigerator.
