Sweet Potato Bread

Sweet Potato Bread (pdf for printing)

OVEN: 325°

BAKING TIME: 30-40 MINUTES

MAKES 1 LOAF

DRY INGREDIENTS:

1 ½ cups gluten free flour (Bob’s Red Mill)

½ tsp baking soda

½ tsp salt

1 ½ tsp cinnamon

½ tsp ginger

½ tsp nutmeg

WET INGREDIENTS:

1 cup mashed baked sweet potato

¼ cup coconut oil

¼ cup honey

1 tsp vanilla

Chia seeds (3 tbls chia seeds and 9 tbls water = 3 eggs). Mix chia seeds with water and leave in refrigerator for 10 minutes.

DIRECTIONS:

  1. Combine dry ingredients and mix well.
  2. Combine wet ingredients and mix well.
  3. Combine wet and dry ingredients and mix well. Put in a greased loaf pan and cook for 30-40 minutes at 325°
