LTD ENERGY BARS
BAKE: 350° FOR 30-40 MINUTES
SUNFLOWER SEED BUTTER:
16 oz sunflower seeds (go raw Organic Sprouted Sunflower Seeds)
1/4 to 1/2 cup coconut oil (melted)
1 tbls raw local honey
1 tsp pure vanilla
In the Vitamix put in oil, sunflower seeds, honey, and vanilla. Turn on, switch to 10, then to high (this takes about 3 seconds). Use the plunger as it gums up.
5 cups gluten free oats (whole)
1 cups gluten free oat flour (grind in a coffee grinder)
2 tsp cinnamon (more if you want)
1 tsp nutmeg
1 cup sunflower seeds (go raw Organic Sprouted Sunflower Seeds)
1 cup rice cereal (Erewhon Crispy Brown Rice)
2 cups organic blueberries
2 cups organic strawberries cup up very small
1 cup local raw honey
1/4 cup coconut oil (melted)
2 tsp pure vanilla
2 cups sunflower seed butter
Mix oats, cinnamon, nutmeg, sunflower seeds, and rice cereal. Put aside.
Mix honey, oil, vanilla. Add sunflower butter. Mix until smooth. Put into oat mixture with fruit. Use hands to turn and smash the fruit (it’s messy but the hands work best).
Have your glass pans greased with a small amount of coconut oil ready as you are going to be messy. Press the dough into the pans (makes 2 big pans). Bake at 350° for 30-40 minutes. Watch after 30 minutes as they cook different every time.
